Description
Polyphenol oxidase (PPO) is mainly distributed in animals, plants, microorganisms and cultured cells. As a copper-containing oxidase, it can catalyze the oxidation of monophenols and diphenols to form quinones, thereby triggering browning reactions. It is closely related to fruit and vegetable processing as well as tea quality.
