Sucrose synthase (SS) plays a major role in sucrose synthesis and a crucial regulatory role in sucrose storage in roots. The initiation of sucrose storage in roots is characterized by the emergence and subsequent increase in SS activity. Through the action of SS, when the decomposition activity of SS exceeds its synthesis activity, sucrose is broken down, forming a large amount of the essential substances needed for the construction of assimilated organs; conversely, when the synthesis activity exceeds the decomposition activity, sucrose formation is favored.
