Yeast extract may be autolyzed, which contains the cell walls, where the yeast cells are broken down by their own enzymes. Hydrolysed yeasts are broken down using enzymes added externally for the sole purpose. The compound is stable under general conditions, however, it is incompatible with strong oxidizing agents.
